Since 2017 he has also run I Vicini - \"the neighbours\" - a negociant project where he works with chemical-free growers just over the border on the Italian side of the Alps and brings the grapes back to his Savoie cellar to make them his way. The Favorita is part of that project. \u003c\/span\u003e\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003e\u003cspan\u003eFavorita is the Piedmontese name for Vermentino, and it comes from Giorgio Barbero in Asti, Piedmont. Jean-Yves gives it around two weeks of skin maceration before pressing, then ages in 300-litre barrels.
