They started in 2023 and build their drinks around fermented vegetables and botanical extracts rather than dealcoholised wine, which is why they taste like their own thing rather than a wine with the good bit taken out.\u003c\/p\u003e\u003cp\u003eNo 4 is their red: fermented red beetroot with wild blueberry, plus botanical extracts of lavender, juniper berries and a little chilli. Deep ruby with a purple edge.\u003c\/p\u003e\u003cp\u003eWe have not yet tried this one, but we hear it smells like Mediterranean woodland in summer, when the lavender is out and the juniper is growing wild.
