NATURAL WINES BY LAURENT SAILLARD
Laurent Saillard spent years in New York restaurants, helping open Balthazar and running Ici in Brooklyn. He then learned the trade in the Loire with Noëlla Morantin and at Clos Roche Blanche, and made his first vintage in 2012. When the Clos Roche Blanche owners retired, he took on part of their vines. He now works about six hectares from a century-old cellar in Pouillé, in Touraine.
His grapes are Loire natives: Sauvignon Blanc, Gamay, Pineau d'Aunis and Grolleau. Fermentations rely on native yeasts, the wines age in fibreglass vats or old oak, and at most a tiny dose of sulphur is added just before bottling. Ca Se Discute is made from Pineau d'Aunis bought in from Domaine du Cambalu, macerated for six days in steel, then bottled with no added sulphur. It is a light, peppery red. Lucky You and La Pause are two of his best known.
