Kizan is a natural wine crafted by , in the Nagano region in Japan. This sake wine is made with Unpasteurised Rice Wine grapes.
Production details of Kizan: Kizan is brewed by Chikumanishiki Shuzō, a sake brewery founded in 1681 in Saku City, Nagano Prefecture, perched on the Sakudaira plateau at 700m elevation. Winter temperatures plunge to -10°C, creating ideal sake brewing conditions. The brewery uses soft water from four wells fed by the Chikuma River. This Junmai Ginjo is brewed from Miyama Nishiki rice polished to 55%, then bottled unpasteurised and undiluted (nama genshu).
Tasting Notes: We have not yet tried this vintage of Kizan by Chikumanishiki Shuzō, but we hear it has notes of ripe yellow apple, melon, pear, mint and a hint of yogurt.
