They started in 2023 and build their drinks around fermented vegetables and botanical extracts rather than dealcoholised wine, which is why they taste like their own thing rather than a wine with the good bit taken out.\u003c\/p\u003e\u003cp\u003eNo 6 came out of a collaboration with the Michelin-starred Atelier Moessmer. It is fermented white beetroot with linden blossom, pine and fennel seed.\u003c\/p\u003e\u003cp\u003eWe have not yet tried it, but we hear it smells of caramelised peach and tastes like the mountains, with floral notes, subtle fruit, a gentle spiciness and a light savoury tension.
