Here, whole grapes have been left to macerate for 10 to 12 days on the skins giving it some extra vibrancy, and the wine is then matured in concrete tanks. It is bottled unfiltered and without the addition of sulphites. These grapes are fermented in a Semi-Carbonic method, and left to macerate on the skins for 12 days before resting in concrete tanks for 9 months. \u003c\/span\u003e\u003c\/p\u003e\n\u003ch2\u003e\u003cstrong\u003eHow does Olla Rouge taste?\u003c\/strong\u003e\u003c\/h2\u003e\n\u003cp\u003e\u003cspan\u003eWe have not yet tried this 2025 vintage as it just came in at time of writing, but Olla Rouge 2024 featured \u003cstrong\u003epunky, high acidity\u003c\/strong\u003e that makes it very \u003cstrong\u003ethirst-quenching\u003c\/strong\u003e and ready for another sip, with volatile elements some will love more than others. The wine is a blend of Carignan and Lledoner Pelut (Hairy Grenache) from 80 to 130 year-old vines on iron-rich red schist soils. Whole-cluster ferment with 4-day maceration in fibreglass tanks, then 9 months in demi-muid barrels.
