This vintage of this famous wine from the domain (it changes most years) is made with 60% Syrah and 40% Grenache grapes.\u003c\/p\u003e\n\u003cp\u003eThis is big and bold, with Syrah very dominant on the palate. Quite iron like too, with dusky, prevailing sandy tannins. Quite herbal in ways and with blueberry, baked apple, blackberry and a savoury touch at the forefront. Whilst this is a 2019 vintage, it feels it could age longer to find a new dimension\u003c\/p\u003e\n\u003cp\u003e\u003cmeta charset=\"utf-8\"\u003e\u003cstrong\u003eNOTE: DRINK WITH COMPANY IN ONE SITTING, as whilst tasty it is unlikely to hold overnight.\u003c\/strong\u003e\u003c\/p\u003e\n\u003cp\u003eMost of the vines are around 75 years old for the Indigo cuvee and t\u003cspan\u003ehe harvest is entirely destemmed, which is then followed by a 14-week maceration, usually in stainless steel vats. After this, the Indigo wine sees 14-16 months aging, also in tank.
