This is where the jazz metaphors fall away and what remains is something simpler and more serious.\u003c\/p\u003e\n\u003ch2\u003e\u003cspan style=\"text-decoration: underline;\"\u003e\u003cstrong\u003eWhat grapes make up Silk Blue?\u003c\/strong\u003e\u003c\/span\u003e\u003c\/h2\u003e\n\u003cp\u003e\u003cbr\u003e\u003cstrong\u003e80% Ploussard (also known as Poulsard), 15% Trousseau, and 5% Savagnin\u003c\/strong\u003e, all from the Cote de Feule in Pupillin, harvested by hand. Half the fruit undergoes whole-bunch natural fermentation; the other half goes through a six-month maceration in old oak barrels. The two portions are then blended and transferred to stainless steel and acacia, before bottling without filtration and without added sulphites at any stage.\u003c\/p\u003e\n\u003cp\u003eWe have not yet tried this wine but hear the palate is textural and savoury, with a spicy edge from the Trousseau and a savagnin undertone that gives it structure and persistence whilst the Poulsard keeps it light and fresh\u003c\/p\u003e\n\u003cp\u003e White pepper, clove, and a finish that is long, dry, and quietly complex, is what we expect\u003c\/p\u003e\n\u003ch2\u003e\u003cspan style=\"text-decoration: underline;\"\u003e\u003cstrong\u003eAbout Patrice Bégeut \/ Domaine Hughes Béguet\u003c\/strong\u003e\u003c\/span\u003e\u003c\/h2\u003e\n\u003cp\u003e\u003cbr\u003ePatrice Béguet left a career as an IT consultant in Paris to return to Mesnay, near Arbois in the Jura, where he was born. He took the wine diploma at Beaune, became Demeter certified, and now farms around four hectares of Jura vines — Ploussard, Trousseau, Savagnin, and Chardonnay — under the estate label Domaine Hughes Béguet. His ‘Big Bunch Theory’ négociant series sources fruit from biodynamic producers across France, creating experimental cross-regional blends.
