But at first can be a little shy on the nose, so pour into a carafe and give it a shake. \u003c\/p\u003e\n\u003cp\u003eWhen it finds itself, it transforms into a butterfly BURSTING with vibrant acidity (like seriously wow acidity!) and a powerful attitude on the nose. On the palate, expect huge bursts of lemon meringue pie, grapefruit zest, lime and white pepper, with a surprisingly creamy finish for a Savagnin, almost lactic in some way. \u003c\/p\u003e\n\u003cp\u003eThis is probably the best Ouillè wine we have had from Tony Bornard, and it really wows. The grapes are pressed and undergo fermentation in Inox tanks, and then are aged in old neutral Foudre barrels\u003cbr\u003e\u003cbr\u003eThis wine has a very sexy nose, almost southern french in style and Pinot Noir would not be a first guess smelling blind, there is some more Grenache or Syrah vibes. It’s a warm vintage for sure, and on the palate this wine has some structure that equals the nose, and could be great for aging.\u003c\/p\u003e\n\u003cp\u003eRich, cassis and black cherry elements with soft leather hints and green bell pepper in the background. It will age well, as its name suggests.\u003ca href=\"\/en-it\/collections\/pinot-noir\"\u003e\u003c\/a\u003e\u003c\/p\u003e\n\u003cp\u003eThe grapes for Le Garde Corps is from a vineyard in the Pupillin region known as \"La Bidode,\" planted in 1988, which feature 4 different types of Marl stones.\u003c\/p\u003e\n\u003cp\u003eAlcoholic fermentation and maceration starts in stainless steel tanks. Punching and pumping over is then once a day for one month. Aging in barrels then in stainless steel tanks again. Bottled on July 9, 2020, unfiltered, without added SO2, and with its natural fermentation gases. No added sulphites and then at least 2 years aging in the bottle at the domaine before release. After direct pressing in a pneumatic press, fermentation begins in stainless steel tanks, then transferred to barrels for fermentation. Aging with topping up and without lees stirring. This wine, with excellent aging potential, is topped up and gives an impression of almost sweetness. It really comes though great on the raisin notes, with vanilla cream and bruised yellow apple. A real gem.
