The addition of white grape Muscat is what helps lift the body of the wine to be more lighter, despite the spicier touches from the Syrah and Grenache which would usually make it quite a medium-heavy wine. Here its very, very drinkable but still has some soul!\u003c\/p\u003e\n\u003cp\u003e\u003cstrong\u003eWhilst is says 2023, this is a smooth non-vintage, Solera blend which has great depth on the finish considering its fresh and youthful mouthfeel. There is a hint of spice going on here, alongside cherry, violets and blackberry. The blend combines Muscat Blanc à Petits Grains with Macabeu, bringing together aromatic intensity with a more savoury Mediterranean edge.\u003c\/p\u003e\n\u003cp data-end=\"868\" data-start=\"315\"\u003eThe grapes are grown on limestone-rich soils around Calce, where cooling winds from the Pyrenees help retain freshness despite the warm climate. Harvested by hand, the fruit undergoes around 10-12 days of whole-bunch skin maceration, giving the wine its hazy golden colour, gentle tannic grip and vibrant texture. After pressing, the wine rests in concrete tanks to preserve purity and energy before being bottled unfiltered and without added sulphur. These higher-altitude vineyards benefit from cooling mountain influences from the Pyrenees, helping preserve acidity and freshness despite the warm Mediterranean climate. Yields are kept low, around 25 hl\/ha, giving concentration without heaviness.\u003c\/p\u003e\n\u003cp data-end=\"1132\" data-start=\"762\"\u003eThe fruit is hand-harvested and fermented with indigenous yeasts using a semi-carbonic approach. Whole bunches spend around 12 days macerating on the skins before pressing off to concrete tanks, where the wine rests for around 8-9 months. As with all Matassa wines, the approach in the cellar is low-intervention: unfined, unfiltered and with little to no added sulphur.\u003c\/p\u003e\n\u003ch2\u003e\u003cstrong\u003eHow does Olla Rouge taste?\u003c\/strong\u003e\u003c\/h2\u003e\n\u003cp\u003e\u003cspan\u003eWe have not yet tried this 2025 vintage as it just came in at time of writing, but Olla Rouge 2024 featured \u003cstrong\u003epunky, high acidity\u003c\/strong\u003e that makes it very \u003cstrong\u003ethirst-quenching\u003c\/strong\u003e and ready for another sip, with volatile elements some will love more than others. We're talking real energy.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cstrong\u003eFlavourwise, expect big red fruit, vanilla and even some black tea vibes. \u003c\/strong\u003e We think it's d\u003cspan\u003eelicious! The old bush vines naturally produce tiny yields, concentrating flavour whilst maintaining remarkable finesse.\u003c\/p\u003e\n\u003cp\u003e\u003cmeta charset=\"utf-8\"\u003eFor the 2024 vintage, the grapes were fully destemmed before fermentation with indigenous yeasts, bringing a more delicate and precise expression of Carignan compared to the whole-bunch approach used in some other Matassa wines. The wine is then aged across a mixture of concrete tanks, clay amphorae and large neutral old barrels, allowing texture and complexity to develop without heavy oak influence.
