The wine is 100% Garnacha Blanca (Grenache Blanc) harvested in August from a modest vineyard exposed to strong winds (the wine takes its name from the wind). 24-hour maceration, then alcoholic fermentation with wild yeasts and maturation in steel. No added sulphur.
