Yields are kept low, around 25 hl\/ha, giving concentration without heaviness.\u003c\/p\u003e\n\u003cp data-end=\"1132\" data-start=\"762\"\u003eThe fruit is hand-harvested and fermented with indigenous yeasts using a semi-carbonic approach. Whole bunches spend around 12 days macerating on the skins before pressing off to concrete tanks, where the wine rests for around 8-9 months.
