Harvested by hand, the fruit undergoes around 10-12 days of whole-bunch skin maceration, giving the wine its hazy golden colour, gentle tannic grip and vibrant texture. After pressing, the wine rests in concrete tanks to preserve purity and energy before being bottled unfiltered and without added sulphur. These higher-altitude vineyards benefit from cooling mountain influences from the Pyrenees, helping preserve acidity and freshness despite the warm Mediterranean climate. Yields are kept low, around 25 hl\/ha, giving concentration without heaviness.\u003c\/p\u003e\n\u003cp data-end=\"1132\" data-start=\"762\"\u003eThe fruit is hand-harvested and fermented with indigenous yeasts using a semi-carbonic approach. Whole bunches spend around 12 days macerating on the skins before pressing off to concrete tanks, where the wine rests for around 8-9 months. As with all Matassa wines, the approach in the cellar is low-intervention: unfined, unfiltered and with little to no added sulphur.\u003c\/p\u003e\n\u003ch2\u003e\u003cstrong\u003eHow does Olla Rouge taste?\u003c\/strong\u003e\u003c\/h2\u003e\n\u003cp\u003e\u003cspan\u003eWe have not yet tried this 2025 vintage as it just came in at time of writing, but Olla Rouge 2024 featured \u003cstrong\u003epunky, high acidity\u003c\/strong\u003e that makes it very \u003cstrong\u003ethirst-quenching\u003c\/strong\u003e and ready for another sip, with volatile elements some will love more than others. We're talking real energy.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cstrong\u003eFlavourwise, expect big red fruit, vanilla and even some black tea vibes. \u003c\/strong\u003e We think it's d\u003cspan\u003eelicious!
