You could perceive a slight hint of sulphur due to the type of wine-making that will disappear immediately. Easy to say, less so to do, given the characteristics of our grapes (low yield, concentration, great structure). The path taken was to choose parcels of Sangiovese and Cabernet that had the same degree of ripeness, to be able to vinify them together in steel. The Cabernet is pressed directly, so as not to give the wine excessive structure and tannicity: in the fermentation tank only its must, no skins, together with the Sangiovese which is only destemmed.\u003c\/p\u003e\n\u003cp\u003e Once fermentation is complete, the refinement also takes place in steel. It borrows its name from the stream flowing alongside the vineyards. Vines of Sangiovese, Colorino, Canaiolo and Trebbiano coexist in these old vineyards whose grapes were historically used to produce wine in accordance with the Chianti’s recipe formulated by Baron Ricasoli in 1872 to achieve “the perfect wine”.\u003c\/p\u003e\n\u003cp\u003eFor Chiassobuio they decided to exclude Trebbiano, while red grapes are picked and made into wine together. Half of the grapes is processed in steel tanks, the other half in 25 hL oak vats. Ageing follows the same pattern: half of the wine rests in steel containers for 36 months, the other half in wood.
