The characteristic sugars \u0026amp; acidity you expect from Riesling are also brought into much deeper sharp relief due to the practice of harvesting 20% of each grape with botrytis (noble rot). You may have heard of this being done for something like a half-dry Riesling, but believe us, it works even better for a fully dry one.
