This white wine is made with \u003ca href=\"\/en-it\/collections\/roter-traminer\"\u003eRoter Traminer\u003c\/a\u003e grapes, taken from old vines and grown on limestone soils. \u003cstrong\u003eThe wine is aged for 18 months under a veil of yeast, called Sous Voille and popular with older style wines in Jura, often aged for longer.\u003c\/strong\u003e\u003c\/p\u003e\n\u003cp\u003eWhilst this wine does have oxidative elements as is very cool in this way, it is of course not as oxidative as Vin Jaunes, which require 6 years and 3 moths of oxidative aging before release. It really gives a nice distinctive edge we find very compelling, whilst still preserving freshness at the same time.
