It's also 100% Jacquère from Jean-Yves' Savoie vineyards, but it usually spends around two weeks macerating on the skins, followed by a month of regular pigeage (punching down the skins by hand) to pull out more flavour and structure.\u003c\/p\u003e\n\u003cp\u003eAs always with Jean-Yves, that means native yeasts and no added sulphites. It sits at 11% alcohol.\u003c\/p\u003e\n\u003cp\u003eDrink in one sitting, as with all these Peron wines.\u003c\/p\u003e\n\u003cp\u003eThis wine features a tannic touch which works and evolves, but would also be great for aging. Herbal and sensual, with buttercups, white pepper, umami, miso and bruised apple.
