ONE PER ORDER\u003c\/strong\u003e\u003c\/p\u003e\n\u003ch2\u003eHow is Rufo by Matassa made?\u003c\/h2\u003e\n\u003cp\u003eThis new wine Rufo is made with half of the wine directly pressed (so clear juice) and half of it macerated on their own Macabeu skins for a total of 4 days. This technique is sometimes called a Trompette.
