In the cellar, there is 70% whole bunch vinification in concrete vats with 18 days of vatting\u003cbr\u003e\u003cbr\u003e\u003c\/p\u003e\n\u003cp\u003eTastewise, this has no added sulphites but a more classic Burgundy approach, with notes of blackcurrant and vanilla. Dominque Derain decided to retire, and Julien Altaber now runs the domaine with his wife and partner Carole Schwab.
