Ex Vero I is taken from the lower slopes, Ex Vero II from the middle vineyards and Ex Vero III from the uppermost, featuring rougher and more rocky Opok soils.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003eThe \u003cstrong\u003eEx Vero I S\u003c\/strong\u003e harvested in 2021 presents a higher proportion of Morillon compared to Sauvignon Blanc. The \u003cstrong\u003eEx Vero I S\u003c\/strong\u003e grapes grow about 300m above the sea level on Opok soil, a fine-grained, calcareous marl and silt typically found in the steep Styrian vineyards. The result of the selected grapes from the heavier and more fertile soil on the lower slopes is a beautifully bright and clear white blend with unripe stone fruit notes and a nice herbal touch!\u003c\/p\u003e\n\u003cp\u003eWhilst we haven't tried the 2021 vintage of\u003cstrong\u003e Ex Vero I S\u003c\/strong\u003e yet, we hear it presents \u003cstrong\u003eyellow apple\u003c\/strong\u003e and \u003cstrong\u003egreen pear\u003c\/strong\u003e notes, \u003cstrong\u003etea \u003c\/strong\u003eand \u003cstrong\u003eherbal \u003c\/strong\u003ebut also lemon zest and a little cucumber; you will likely find a \u003cstrong\u003ebright acidity\u003c\/strong\u003e and \u003cstrong\u003esaltiness \u003c\/strong\u003eat the palate, with a \u003cstrong\u003eslight yeasty touch\u003c\/strong\u003e. It's likely perfect to be paired with fish or poultry or some spicy asian food.\u003c\/p\u003e\n\u003cp\u003eA difficult fermentation led to the producer's decision - after a long period of the wine aging on lees - of bottling with a few grams of residual sugar, that perfectly balances the bright acidity of the wine!\u003c\/p\u003e\n\u003cp\u003eBrigitte and Ewald Tscheppe from Werlitsch, together with Styrian wine producers Taus, Tscheppe, Muster and Strohmeier, belong to the \u003cstrong\u003e‘Schmecke das Leben’\u003c\/strong\u003e (‘Taste life’) group. \u003cbr\u003eTheir philosophy is about protecting the land, and making authentic and expressive natural wines that stay honest to their roots.
