This orange wine is made with \u003ca href=\"\/en-jp\/collections\/carricante\"\u003eCarricante\u003c\/a\u003e, \u003ca href=\"\/en-jp\/collections\/catarratto\"\u003eCatarratto\u003c\/a\u003e, \u003ca href=\"\/en-jp\/collections\/malvasia\"\u003eMalvasia\u003c\/a\u003e, \u003ca href=\"\/en-jp\/collections\/moscato\"\u003eMoscato\u003c\/a\u003e and \u003ca href=\"\/en-jp\/collections\/trebbiano\"\u003eTrebbiano\u003c\/a\u003e grapes.\u003c\/p\u003e\n\u003cp\u003eEtnella is Davide Bentivegna, working alone on the north-eastern slope of Mount Etna from the farm at Notti Stellate. He is Sicilian but came to wine late, leaving a corporate job in Milan and learning first from an elderly neighbour who had a single vineyard, then from Stefano Bellotti, Aldo Viola and \u003ca href=\"\/en-jp\/collections\/frank-cornelissen\"\u003eFrank Cornelissen\u003c\/a\u003e. His plots are spread across several contrade between 600 and 1,000 metres, the vines trained low in the local alberello bush style that rules out any machine, with the old dry-stone terraces rebuilt and olive and fruit trees planted among the rows. Each label carries a red dot and a number, and the number is the altitude of that plot.\u003c\/p\u003e\n\u003cp\u003eKaos Bianco comes off vines between 40 and 90 years old at 750 metres. It is picked three times, and each picking macerates on skins for a different length of time, two days, four days and seven days, before the wine goes into steel. This wine changes between white and orange each vintage, but this 2025 is more white.\u003c\/p\u003e\n\u003cp\u003eWe have not yet tried this wine, and nothing has been published for the 2025 vintage.
