It is still run by the fifth generation of the same family and now part of the first small wave natural winemakers in Japan.\u003c\/p\u003e\n\u003cp\u003eJobitaki is a lightly sparkling orange Koshu, fermented on the skins at low temperature for one month. Typically associated with the Yamanashi region, west of Tokyo, Koshu grapes grown in the northern Yamagata shows more acidity and freshness.
