Winter temperatures plunge to -10°C, creating ideal sake brewing conditions. The brewery uses soft water from four wells fed by the Chikuma River. This Junmai Ginjo is brewed from Miyama Nishiki rice polished to 55%, then bottled unpasteurised and undiluted (nama genshu).

Tasting Notes: We have not yet tried this vintage of Kizan by Chikumanishiki Shuzō, but we hear it has notes of ripe yellow apple, melon, pear, mint and a hint of yogurt.
