The vines were planted in 1939 on calcareous soils, farmed using a lunar-calendar approach with help from their bees, sheep and horse Ringo. The grapes are destemmed and given 15 days of maceration with wild ferment, then the wine ages 30 months in French oak. No added sulphur.
