The Irish-Italian couple have run the farm using a lunar-calendar approach since 2014. The wine is 100% Nebbiolo from 1.5 hectares of clay soils, with a range of clonal types to promote biodiversity. The grapes ferment on the skins for 21 days in cement tanks, then age 11 months.
