One time in the cellar, we blended the Riesling with a little bit of Viognier from Mazel and left the juice to ferment in 500lt demi-muids. \u003c\/em\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cem\u003eHere the wine stayed until May 2024, so close to three years. In May we bottled the Riesling\/Viognier, something the wine didn’t appreciated. We decided therefore, to give the now bottled wine another year in cellar, to regain its balance. Today the balance is there, with a beautiful mix of the well-known and relatively serious Alsacian minerality, the southern fruit and often quite lively acidity.
