The winery sits at 1368 metres elevation, making it one of the highest vineyards in Europe. The grape is Palomino Negro (also called Listán Negro), a rare variety outside the Canary Islands. The vines grow between 1280 and 1368 metres on lean, stony soils of schist and clay. The grapes ferment wild in stainless steel, then macerate with whole bunches.
