Rose water, grapefruit, lychee, white pepper, limes, peach sorbet. Very cool and unusual.\u003c\/strong\u003e\u003c\/p\u003e\n\u003ch2\u003e\u003cspan style=\"text-decoration: underline;\"\u003eAbout Babatise from Clos Bateau\u003c\/span\u003e\u003c\/h2\u003e\n\u003cp\u003eBorn after a time where we’d lost a part of the Sauvage we came up with a totally new and creative idea.\u003c\/p\u003e\n\u003cp\u003eLuckily we had good connections in Alsace where we were able to buy Sylvaner, Riesling and a tiny bit of Gewürztraminer grapes ( grown in Alsace and planted on schist). We wanted to do something different with it. So we decided to do a direct press, age the wine in fiber and after age the wine even more on the lees of Mayga (Gamay) in used barrels for another 3 months. The Gamay lees have brought the wine more depth and a velvety taste, color wise it’s peachy (but technically a white wine).
