The blend is 50% Welschriesling and 50% Gemischter Satz (a traditional Austrian field blend of Grüner Veltliner, Weissburgunder, Sauvignon Blanc and more). Most grapes are destemmed and ferment in open-top vats, with about 30% getting carbonic maceration. Everything blends into small oak barrels to finish ferment on gross lees for around 10 months. No temperature control.
