Yuki is a former sommelier from Kyoto's fine dining scene who now makes natural wine in three countries (New Zealand, Australia and Japan). The wine is 66% whole cluster and 34% on skin, with the majority crushed whole-bunch fermented on skins for 20 days. A small portion sees 5 days of carbonic maceration and another small portion 10 days on skins. Aged 9 months in old oak. No added sulphur.

Tasting Notes: We have not yet tried this vintage of Convallaria by Kunoh, but we hear it has notes of red cherry, light vegetal lift, gentle floral character and silky tannins.
