Vines aged between 20 and 80 years grow on limestone, chalk, silicates and grey marls at around 280m elevation. The fruit is gently extracted with an old Piedmontese technique. Once the must reaches 10-11% alcohol, a wooden grid submerges the cap for a softer infusion through the rest of maceration. The wine ages around 10 months across a mix of concrete, wood and amphora.
