Apricot marmalade, tea, herbal, orange rind.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan style=\"\" color:\u003eMethod: Two picks of SB to make Disco. \u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan style=\"\" color:\u003eEach pick was divided into two; carbonic maceration and a reverse saignée.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan style=\"\" color:\u003e The carbonic was uncrushed whole clusters into a sealed up tank for 2 weeks - then pressed and fermented in neutral barrels. \u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan style=\"\" color:\u003eThe reverse saignée is where half of the total fruit was added to a fermenter as uncrushed whole clusters.
