The blend uses Barbera, Dolcetto and Cortese (the last being a white grape lifting the wine's mouthfeel). They farm 100 hectares in the Tortona Hills using a lunar-calendar approach with sheep, beehives, orchards and grain fields.

Tasting Notes: We have not yet tried this vintage of Red & the Beast by Valli Unite, but we hear it has notes of red cherry, ripe berry, soft fizz and a dry Lambrusco-style lift.
