Etna. Half the property is 80-100 year old bush vines of Nerello Mascalese with a sprinkling of Nerello Cappuccio, and the rest of the vineyard is covered with olive trees, fruit trees, and blackberries.

In 2022, the grapes were hand harvested in early October before they were destemmed by hand into a Georgian qvevri. After fermentation, the qvevri was sealed and the grapes were left to macerate for four weeks, during which time malolactic fermentation was undertaken. After pressing, the wine spent two winters in a chestnut barrel on fine lees, prior to being bottled in February 2024 with no fining or filtering.

We hear this wine tastes of plum and cherry, liqorice, and anise, with floral notes and a long mineral finish.
