Sebastien RIffault is a totally unique winemaker in Sancerre, especially because of his use of 'Noble Rot' (Botrytis) which means he harvests the grapes super late, to the point where they develop the fungus.

This Noble Rot gives the surviving grapes a huge amount of complexity and depth.

Whilst vintages and plots vary between wines, you should generally expect to experience incredible notes of meadow flowers, wild honey, vanilla, bruised peach & thyme to name a few notes. Seriously... these wines will amaze you!

This Sauletas (meaning 'Sunny' in Lithuanian, where his wife is from) is a 2011 vintage,  taken from 50 year old vines growing on limestone and clay. It spends 24 months in barrel and 6 months in bottle before release.
