NATURAL WINES BY CAVEAU DU VAL DE L'AMOUR
Caveau du Val de l'Amour is Sylvain Jacquot, who makes wine in the garage behind his house in Cramans, 10 km north of Arbois. He learned vineyard work from his father and grandfather and made wine as a hobby for years before the domaine officially started in 2016. He works around 2 hectares of scattered plots in communes like Arbois, Buvilly and Montigny-lès-Arsures, with vines aged 40 to 100 years.
Ferments are wild and sulphur is kept low. His Pinot Noir, Ploussard and Trousseau have a lovely earthy depth, while the Chardonnay and Savagnin are made both topped up and oxidative, often with a gentle oxidative edge either way. Start with the Chardonnay Arbois Vieilles Vignes, then look for the Chardonnay Savagnin 2020, three years in barrel, and the Vin Jaune 2016, aged over six years under a veil of yeast.
