Elias Muster is the son of Sepp and Maria Muster, one of the most revered names in Austrian natural wine and rather than retreat from the comparison, he’s made something that stands entirely on its own. Coprivus is 100% Sauvignon Blanc from the family’s steepest plots in Südsteiermark, grown on Opok: the ancient limestone-clay soil that gives South Styrian Sauvignon its mineral character rather than tropical reach. The vines are 25 years old.

Elias Muster writes "Copriva means Stinging Nettle in the Slovenian language. Sauvignon Blanc often has similar flavor components to Stinging Nettle, especially the green
electric flavor. Also, the Stinging Nettle has an important meaning in the
holistic spraying."
Winemaking method:
Harvest by hand, grape selection in the vineyard, Whole Cluster Pressing, spontaneous, gentle pressing over a period of 4 hours, 1,5- 2 years (depending on the Vintage) aging in Barriques, or 500-liter barrels. The Coprivus N.V Cuvee is a blend of 2023/2024.
Elias trained at Domaine Christian Binner in Alsace before releasing wines under his own name and helping with his parents work.
Coprivus is not your summer Sauvignon Blanc. The Opok soils strip away the gooseberry-and-grass sharpness and replace it with something more mineral and textured: stone fruit, flint, white flowers, and a long, dry finish with almost saline precision. There is structure here, grip, presence, and a persistence on the palate that demands time in the glass.
Open it an hour early, or give it a few more years in the cellar.
