Olla Rouge 2025 by Tom Lubbe of Matassa is a natural red wine made in the hot South of France, in Roussillon, and is made with a red/white blend of regional grapes Grenache, Grenache Gris and Macabeu - a mix of red and white grapes that gives the wine both juicy fruit and lifted freshness.

The grapes come from old vines planted between roughly 450 and 650 meteres above sea level on clay-limestone soils rich in iron and marl. These higher-altitude vineyards benefit from cooling mountain influences from the Pyrenees, helping preserve acidity and freshness despite the warm Mediterranean climate. Yields are kept low, around 25 hl/ha, giving concentration without heaviness.

The fruit is hand-harvested and fermented with indigenous yeasts using a semi-carbonic approach. Whole bunches spend around 12 days macerating on the skins before pressing off to concrete tanks, where the wine rests for around 8-9 months. As with all Matassa wines, the approach in the cellar is low-intervention: unfined, unfiltered and with little to no added sulphur.

How does Olla Rouge taste?

We have not yet tried this 2025 vintage as it just came in at time of writing, but Olla Rouge 2024 featured punky, high acidity that makes it very thirst-quenching and ready for another sip, with volatile elements some will love more than others. We're talking real energy.

Flavourwise, expect big red fruit, vanilla and even some black tea vibes. We think it's delicious! Works great with Pizza too!

Domaine Matassa is the natural wine estate of Tom Lubbe, who is based in Roussillon, at the Southern tip of France close to Spain. Matassa is one of the most in-demand wineries in the natural wine scene, which stems largely from their approachable drinkability and high quality expressions of local grapes in their vineyards.
