NATURAL WINES BY CLOT DE LES SOLERES
Clot de les Soleres is run by Carles Mora and Montse Mora in Piera, about 50 kilometres from Barcelona in the Penedès. Carles picked up a family winemaking tradition that had stopped in the 1960s. The vineyards sit at around 290 to 325 metres on chalky soils packed with small stones and gravel, with outcrops of clay-limestone. They grow the local Xarel·lo and Macabeu, alongside Chardonnay, Cabernet Sauvignon and Pinot Noir.
Nothing is added in the cellar, including sulphites. The wines are fermented in stainless steel and clay amphora, as in the Cabernet Sauvignon Amphore, and most are single-variety bottlings. Their ancestral pét-nats are the best known, from the Xarel lo Ancestral to the Pinot Noir Ancestral, and often keep a touch of residual sugar which is perfect for sunny afternoons. There are still wines too, like the Xarel·lo and a Cabernet Sauvignon Rosado.
