Expect forest fruit berries such as cherry, raspberry, red currants accompanied by almost cooked red plums accompanied by a hint of pencil lead, dusky touches and a lively acidity. The palate is easy-drinking with juicy, vibrant flavors that showcase the youthful character of Corvina with an unexpected sandy tannic grip from a light bodied wine, making it very suitable for richer, meatier dishes or a BBQ

Production Process of Vin Da Cagnara (Corvina) Litro Rosso 2023 by Sassara

The natural wine Vin Da Cagnara (Corvina) Litro Rosso 2023 from the producer Sassara is made using fermentation and maceration in open plastic vats of approximately 10 hectoliters without temperature control, followed by aging in stainless-steel and fiberglass tanks. After pressing, the wine rested for about five months in these tanks before bottling. The wine is composed of 100% Corvina grapes and undergoes approximately 20 days of skin-contact maceration during fermentation.

NATURAL WINES BY SASSARA

Sassara is Alessia and Stefano Bertaiola, farming around 10 hectares at Valeggio sul Mincio, on the moraine hills just south of Lake Garda. Stefano's family worked this land for generations, and the couple took it over in 2007, when it was still called Monte dei Roari. Soils mix glacial moraine and old marine deposits, many vines are over 60 years old, and nearly all the grapes are local, from Corvina and Rossanella to Garganega and Trebbianello.

They want wines that taste of the place and its people, bright and juicy rather than the heavy, over-extracted style the region is known for. Ferments are wild and unchilled, in steel, fibreglass and concrete, with minimal sulphur. Esotico co-ferments more than ten red and white grapes, Coconar Orange spends about 60 days on skins, and Goto Bardolino is a light cherry red. The Vin Da Cagnara litres are for everyday drinking.
