Who Is Tony Bornard?
Tony Bornard makes wine in Pupillin, the small village in the Jura that calls itself the world capital of Ploussard. His father, Philippe Bornard, was a well-known vigneron there and a neighbour and friend of natural wine legend Pierre Overnoy.
Tony started his own small domaine in 2013, and in 2017 took over his father's vines and brought the two together. He has kept the classic Jura style while giving the wines his own flair, a story we tell in our documentary below.
Today the domaine covers just over 11 hectares. The bottles are easy to spot: every label carries a ginger fox.
Popular Tony Bornard Wines
Pupillin is Ploussard country, and Tony's Ploussard cuvées such as La Chamade are among his most sought-after wines. Le Garde Corps and Le Ginglet are made from Trousseau, and L'Aide Mémoire is his Pinot Noir.
On the white side, Les Chassagnes is Savagnin and Les Marnes is also Savagnin, aged under a veil of yeast. Melon le Rouge Queue is made from Melon à Queue Rouge, a rare local mutation of Chardonnay with red stalks.
There is also Vin Jaune, the Jura's famous wine aged for years under a veil of yeast, and L'Ivresse de Noé, a sweet wine in 50cl. These are rare bottles, often one per order, and the selection changes all the time, so check the list below for what we have right now.
How Tony Bornard Makes His Wines
The vines grow around Pupillin on the Jura's mix of soils, including schist and blue, grey and red earth. The grapes are the Jura classics: Ploussard, Trousseau, Savagnin, Pinot Noir and Chardonnay, plus Melon à Queue Rouge.
Fermentations are spontaneous, and the wines age in old oak barrels, steel and fibreglass tanks, with concrete egg and amphora used for some Savagnin. The Vin Jaune spends years under its veil of yeast before release.
No sulphur goes in, and neither does anything else. The wines are pure and precise, with the energy the best Jura wines are known for.
