Saustò 2018

Saustò 2017 by Monte Dall´Ora is a natural wine made in Veneto with Corvina, Corvinone, Rondinella, Molinara, Croatino and Oseleta grapes.

This big, red Italian wine Sausto is re-fermented on the pomace of recioto and will feature big fruity tones, alongside jammy touches and hints of graphite. Please note the label on the photo will display a different vintage

Production Details: Saustò is a wine from Valpolicella made using the ripasso method. The blend contains Corvina, Corvinone, Rondinella, and Oseleta. After initial fermentation, the wine is refermented on the dried grape skins from Amarone production, building body and complexity. Ageing happens in large wooden vessels.

Tasting Notes: We have not yet tried the 2018 vintage of Saustò by Monte Dall'Ora, but we hear it has notes of dark cherry, plum, spice, dried herbs, and moderate tannin structure from the ripasso process.
