The Cortese sees 12 hours on its skins for added texture, then ferments once before unfermented must is added at bottling to start the second fermentation in bottle.

Tasting Notes: We have not yet tried this vintage of Il Bruto & The Beast by Valli Unite, but we hear it has notes of apple, honeysuckle, cider and light brioche.
