Production details of Bolle di Fognano Pet Nat: Bolle di Fognano comes from Paolo Foppiani, a small natural wine producer in Bobbio (Emilia-Romagna). He works alongside Giulio Armani of Denavolo and La Stoppa. The wine is a Rosato Pet Nat from Barbera, given a short skin maceration, then aged 6 months in stainless steel before refermenting in bottle in spring with the addition of must to kick off the second fermentation.

Tasting Notes: We have not yet tried this vintage of Bolle di Fognano Pet Nat by Paolo Foppiani, but we hear it has notes of red fruit, creamy bubbles, citrus zest and a subtle umami finish.
