Riesling 2021 by Dominik Held is made in Rheinhessen with Riesling grapes.

 

Dominik wrote his thesis in Geisenheim about his Riesling. He researched which yeasts were at work when, and how the lees in the cask affected their populations. He counted 23 different yeast strains in different stages of the fermentation!
