Production details of Bistrologie: Bistrologie is Jean-Pierre Robinot's Chenin Blanc from the Loire. The Chenin grows on clay soils rich in limestone and flint. Wild ferment in oak barrels can run from 2 to 4 years (extreme by any standard). Ages around 14 months on the lees in old oak. No added sulphur. Touch of residual sugar but classified as dry. ONE PER ORDER.

Tasting Notes: We have not yet tried this vintage of Bistrologie by Jean Pierre Robinot, but we hear it has notes of fresh yellow apple, butter, ginger and a touch of citrus.

Jean-Pierre Robinot is a legend in the natural wine world, hailing from the Loire Valley in France. Under the domain name LES VIGNES DE L'ANGEVIN, Robinot makes exceptional wines like Bistrologie, Le Regard, L'iris, Lumière de Silex, L'As des Années Folles, Charme, and more.
His journey into the world of natural wine started long before he made his own wine. He played a major role in the Paris wine scene, opening one of the first natural wine bars and even publishing a wine journal.
What sets Jean-Pierre apart, besides his amazing expressions of Pineau D’Aunis and Chenin Blanc, is his commitment to traditional methods—aging his wines in his limestone cellar and never using any sulphur. His daughter Juliette might one day take over the vineyards, continuing his exceptional work.
