NATURAL WINES BY HUMMEL
Hummel is the winery of Horst Hummel, a German who splits his time between Berlin and Villány in southern Hungary, where he founded the estate in 1998. He farms 7.5 hectares of limestone and loess planted with Portugieser, Kékfrankos, Cabernet Sauvignon, Cabernet Franc and Merlot, and works Hárslevelű and Furmint from leased vines. Since 2020 he has followed 'Natural Synergetic Winegrowing', his own system, which he has written a book about and which includes playing frequencies to the barrels.
Whites spend 3 to 20 days on skins and mature on the lees in vats or used barriques. Reds ferment in open vats with gentle extraction, and most wines rest up to two years before release. Hárslevelű is the grape to explore here: Góré spends around three weeks on skins before ageing in used Burgundy barrels, and Bernstein is another take on it. There is also PRYXX, a zero-dosage sparkling wine.
