NATURAL WINES BY CATI RIBOT
Cati Ribot is a third-generation farmer from Santa Margalida in north-east Mallorca. Her family moved from table grapes, almonds and olives to wine grapes in the 1990s, mostly international varieties. Cati went the other way with her own label, Ve d'Avior, Mallorquin for "from the past", working with island grapes that nearly vanished: Escursac, Callet, Callet Negrella, Fogoneu, Gorgollassa, Giró Ros, Prensal Blanc and Malvasia de Banyalbufar. Her Son Llebre vineyard sits on Cal Vermell, the local iron-rich red clay and limestone.
She swapped her father's big vessels for small tanks and clay amphorae. Son Llebre Negre blends Escursac, Callet and Callet Negrella from that vineyard, with 30 to 40 days on the skins in steel and amphora, a few months in an old 500-litre barrel and no added sulphur. She also makes a varietal Escursac, a lightly macerated Malvasia and Bosquet, an Escursac pet-nat.
