Production details of Cabernet Sauvignon Ancestral: This sparkling Pet Nat is made by Carles and Montse Mora at Clot de les Soleres in Penedès, Catalonia. The wine is 100% Cabernet Sauvignon, hand-picked and immediately whole-pressed without skin maceration, then transferred to stainless steel for wild ferment at 17°C. Bottled while still finishing fermentation in the ancestral method, then ages 13 months on the lees before disgorgement. No added sulphur.

Tasting Notes: We have not yet tried this vintage of Cabernet Sauvignon Ancestral by Clot de les Soleres, but we hear it has notes of red berry, light spice, fine bubbles and a touch of residual sweetness.
