MURI Drinks
MURI is a Copenhagen based project of Murray Paterson and Ioakeim Goulidis, who both bring in rich experience in the art of distilling, fermenting and layering to create insanely tasty, deep and unique non-alcoholic beverages. In recent years, Copenhagen has become a sort of gastronomic center for fermentation, so MURI drinks naturally treat this process as a base of their creations, but thanks to deep knowledge of the process they manage to keep alcohol levels at bay.
They have a vast amount of ingredients at their disposal: cultivated yeasts, kefir grains, sourdough starter, foraged herbs… They use all sorts of different techniques, including dry carbonic maceration, wood smoking and lactic fermentation. MURI drinks are rich, interesting and truly remarakable.
